🛒 Ingredients:
- 2–3 lb chuck roast
- 2 tbsp olive oil (or vegetable oil)
- Salt & pepper, to taste
- 1 packet ranch dressing mix
- 1 packet dry onion soup mix (or au jus gravy mix)
- ½ cup (1 stick) salted butter
- 8 peperoncini peppers
Instructions:
1. Sear the Roast
In a large skillet over high heat, warm the oil until shimmering. Pat the chuck roast dry and season lightly with salt and pepper. Sear for 2–3 minutes per side until deeply browned.
Shortcut: If your slow cooker has a sauté function, do this step directly in the pot!
2. Assemble in the Slow Cooker
Transfer the roast to the slow cooker. Sprinkle the ranch dressing mix and onion soup mix evenly over the top. Add the stick of butter and arrange the peperoncini peppers around the meat.
3. Cook Low & Slow
Cover and cook on low for 8 hours—no peeking! When it’s done, the roast will be fork-tender and infused with rich, zesty flavor.
4. Shred & Serve
Shred the roast with two forks, discarding any large pieces of fat. Spoon the buttery, flavorful juices over the meat before serving.
👩🍳 Chef’s Tip:
For extra depth, add a splash of the pepperoncini brine into the slow cooker at the beginning. It gives the roast just a touch more zip.
🍽️ Serving Suggestions:
This roast pairs beautifully with:
- Creamy mashed potatoes
- Buttery egg noodles
- Roasted Brussels sprouts or green beans
- Pillowy dinner rolls to soak up the sauce
Leftovers make incredible sandwiches the next day—just pile onto a bun, top with melty provolone, and toast!
